I really liked Day's Power Bowls so picked up her newest cookbook. I wasn't nearly as impressed. In theory, it's a good cookbook - recipes to perk up your lunch time and creative ways to pack salads, soups, and stews for transporting to make them stay for lunch without becoming slimy. Almost of the recipes don't require reheating so no waiting in line for the microwave. But... Almost all the recipes require cooking. And quite a bit of it. I understand the idea of meal prepping but on a Sunday I'm supposed to meal prep my lunches in addition to everything else? It sounds exhausting.
